The results proved that domesticated wheat species and emmer species had higher anti-oxidation capacities than wild species and einkorn species, respectively. 結(jié)果說明，栽培型與野生型小麥相比，二粒小麥與一粒小麥相比，具有較強的抗氧化能力。

One of us (Oeggl) has detected bran of the primitive wheat called einkorn, so fine that it may well have been ground into flour for baking bread rather than having been made into a gruel. 這項研究現(xiàn)在還在進行。筆者之一（奧格）發(fā)現(xiàn)了原始小麥（二倍體小麥）的麩皮，由于它非常細，因此麥子很可能是先磨成面粉再烘焙成面包，而不是直接制作麥片粥。
